<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">1 large yellow onion </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">1 Tablespoon olive oil </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">4 cloves garlic, minced </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">4 cups filtered water </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">2 bouillon cubes </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">dash of freshly ground sea salt </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">dash of freshly ground pepper </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">2 bay leaves </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">2 teaspoons dried rosemary, crushed between your fingers </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">5 large carrots, diced </span></li>
<li><span style="font-size:medium;font-family:arial,helvetica,sans-serif">2 bunches kale, chopped</span></li>
</ul>
<p><span style="font-size:medium;font-family:arial,helvetica,sans-serif">1- Bring a large pot of water to a boil, add the beans and cook for 60-90 minutes. Drain and set aside. </span></p>
<p><span style="font-size:medium;font-family:arial,helvetica,sans-serif">2- In your soup pot heat the olive oil over medium heat. Add onion and garlic and cook for 5 minutes. </span><br />
<span style="font-size:medium;font-family:arial,helvetica,sans-serif">3- Add  the cooked beans, water, bouillon, salt, pepper, bay leaves, rosemary,  and carrots. Simmer for 15-20 minutes. Add the kale and cook another 15  minutes or until kale is tender. Add more water if needed. </span></p>
<p><span style="font-size:medium;font-family:arial,helvetica,sans-serif">4- Remove the bay leaves, add more salt and pepper if needed. </span></p>

Servings: 4</p>
<p><strong><span style="text-decoration:underline">Here&#8217;s what you need:</span></strong></p>
<ul>
<li>1 cups cooked quinoa</li>
<li>1 tsp olive oil</li>
<li>1/2 onion, chopped</li>
<li>1 clove garlic, minced</li>
<li>1/2 red bell pepper, chopped</li>
<li>1/2 green bell pepper, chopped</li>
<li>1/2 yellow bell pepper, chopped</li>
<li>1 ear of corn, kernels cut from cob</li>
<li>Handful of asparagus stalks, cut into 1 inch pieces</li>
<li>2 cups baked chicken breast, cut into small cubes</li>
<li>1 can of organic black beans, drained and rinsed</li>
<li>splash of lemon juice</li>
<li>splash of lime juice</li>
<li>dash of salt and pepper</li>
<li>splash of soy sauce</li>
<li>1/4 cup fresh parsley, finely chopped</li>
</ul>
<ol>
<li>Cook the quinoa and set aside. Place a large saucepan over medium  heat. Add the oil, onion and garlic. Sauté for about 3 minutes. Add the  bell peppers, corn and asparagus, cook until the vegetables are tender.  Add the chicken and beans, cook for another 10 minutes, adding the rest  of the ingredients.</li>
<li>Place a serving of quinoa on each plate and top it with the vegetable mix.</li>
</ol>
<p><strong>Nutritional Analysis: </strong>One serving equals: 293 calories, 5g fat, 32g carbohydrate, 4.6g fiber, and 29.4g protein.</p>

<li>2 cups Super Flour, divided</li>
<li>1 Tablespoon Canola oil</li>
<li>1 cup organic apple juice</li>
<li>1 Tablespoon active dry yeast or 1 packet active dry yeast</li>
<li>Salt &#8212; optional</li>
</ul>
<ol>
<li>In a large mixing bowl combine 1 cup of the super flour, canola oil,  apple juice and yeast. Beat with electric mixer for about 3 minutes.  Add the remaining 1 cup of super flour.</li>
<li>Knead for 10-15 minutes, add water or flour as needed for a good  consistency. Roll 6 pieces of dough into long snakes and form into  pretzel shapes.</li>
<li>Coat a baking sheet with non-stick spray, place the pretzels on the  sheet and allow to rise for 30 minutes. Heat oven to 450 degrees F. If  desired, coat the top of each pretzel with a small amount of water and  sprinkle with salt.</li>
<li>Bake the pretzels for 15 minutes or until they become golden brown.</li>
</ol>

<li><big>1/2 red bell pepper, finely chopped </big></li>
<li><big>1/2 yellow bell pepper, finely chopped </big></li>
<li><big>1/2 apple, finely chopped </big></li>
<li><big>2 Tablespoons nonfat mayonnaise </big></li>
<li><big>1 Tablespoon nonfat ranch salad dressing </big></li>
<li><big>1 teaspoon dried dill </big></li>
<li><big>4 large lettuce leaves, washed </big></li>
<li><big>Pepper to taste</big></li>
</ul>

<li><big>Combine the tuna, onion, bell pepper, and apple in a medium bowl. In a  small bowl mix the mayonnaise, ranch dressing and dill. </big></li>
<li><big>Add the mayonnaise mixture to the tuna and mix until well  combined.</big></li>
<li><big>Arrange the lettuce leaves on two plates, and fill with tuna. Garnish  with a dash of pepper.</big></li>

<p><strong>1</strong>- Steam the broccoli until just tender. Coat a medium sized pan with cooking spray,<br />
add the steamed broccoli, chopped onion, sliced mushrooms, diced celery, and raw spinach.<br />
Cook on medium heat until the spinach has cooked.</p>

2 or 3 garlic cloves, minced<br />
1 teaspoon agave nectar or pure maple syrup<br />
1 teaspoon ground coriander<br />
1/2 teaspoon ground cinnamon<br />
1/2 teaspoon ground cumin<br />
1 teaspoon grated or minced fresh ginger<br />
1/2 teaspoon saffron<br />
2 medium size sweet potatoes or garnet or jewel yams, peeled and cut into 1/2 inch cubes<br />
1 can (15oz) diced tomatoes, undrained<br />
1 can (15oz) chickpeas drained and rinsed<br />
Salt and pepper to taste</p>
<p>Heat 3 tablespoons of water or vegetable stock  in a soup pot over medium heat. Add onion, peppers and garlic, and cook for 5 minutes. If the liquid begins to evaporate, add a little more.<br />
Stir in the agave nectar, coriander, cinnamon, cumin, ginger and saffron and cook for 1 minute, stirring constantly. Add sweet potatoes, and stir to coat. Stir in tomatoes, remaining 1 1/2 cups water and chickpeas. Bring to a boil, then reduce heat to low.<br />
Simmer until sweet potatoes are tender, about 30 minutes. Season with salt and pepper, then serve over quinoa or brown rice.</p>
